Fish with Bacon Crumble Topping

Did someone say bacon? With tender fish fillets?!? Oh, yes indeed!

Fish with Bacon Crumble Topping

1 oz. butter, softened (2 tbs.)
1 tbs. coarsely chopped fresh tarragon leaves
4 rashers bacon, chopped small
1 oz. fresh breadcrumbs (1/2 cup)
4 haddock or cod fillets
broccoli rabe or broccolini

Heat the oven to 400°F. Mix together the butter and tarragon with a grinding of pepper. Tip the bacon into a hot frying pan and cook until starting to go nice and crisp. Stir in the breadcrumbs, a little more pepper, and half the tarragon butter. When melted, remove from the heat and set aside.

Place the fish on an oiled baking sheet, season, and roast for 10 minutes, or until done to you liking.

Meanwhile, steam the broccoli rabe until tender and toss with the remaining tarragon butter.

Arrange the broccoli on four plates, lay the fish over it and top with the bacon mixture.
