Pizza Chicken Melts

We have been making this chicken recipe since it was first published by GoodFood magazine in 2002. It is one of our children’s favorites because it is so yummy and one of our favorites because it is so effortless.  We have used all types of cheese (i.e. whatever happened to be in the fridge) but we find that a good, mature cheddar is the most delicious! We are certain this will become one of your favorites as well!

Pizza Chicken Melts

4 boneless, skinless chicken breasts
2 tbs. olive oil
4 tsp. basil pesto
4 oz. grated cheddar cheese (1 cup packed)
8-10 cherry tomatoes, quartered
chopped fresh chives or green onions

Sandwich the chicken between 2 pieces of waxed paper and pound firmly with a rolling pin or meat mallet to flatten the chicken to a uniform height. Season with salt and pepper.

Heat the olive oil in a large skillet and cook the chicken for 3-4 minutes on each side, or until golden and just cooked through.

Place the chicken on a foil-lined baking sheet. Spread each piece with pesto, sprinkle with cheese and top with tomatoes. Broil for 2-3 minutes, until the cheese melts. Serve sprinkled with chives.
