Super-Quick Indian Rice

This rice is the perfect accompaniment to any Indian-inspired dish, or wonderful with a simple roasted chicken or grilled chop. Garam masala is a spice blend, readily available at most finer food stores, but also easily made at home.

To make your own garam masala, combine

1½ tbs. each ground coriander, ground cardamom, black pepper
1 tbs. ground cumin
1 tsp. cinnamon
½ tsp. each ground cloves and nutmeg

Store in a tightly sealed jar. Useful in many savoury and sweet dishes.

Super-Quick Indian Rice

7 oz. basmati rice (1 cup)
1/2 – 1 tbs. garam masala (depending on taste)
4 oz. frozen peas, thawed (1 cup)
2 oz. toasted sliced almonds (1/2 cup)

Cook rice according to package directions. When done, fluff it with a fork and stir in the garam masala, peas, and almonds. Cook for 2-3 minutes, then serve.
