Sticky Marmalade Chicken

Here is a wonderful chicken entrée that is fast and easy, and OH — so good! You’ll need nothing more than a little steamed rice (to soak up the sauce, of course!) and a green salad to serve alongside, and dinner is on the table. Snap!

Sticky Marmalade Chicken

4 boneless, skinless chicken breasts
1 tbs. olive oil
1 cup chicken stock
4 tbs. orange marmalade
1 tsp. fresh thyme leaves, or ½ tsp. dried

Place the chicken between two sheets of waxed paper and, using a rolling pin, flatten them to an equal thickness. Season them with salt and pepper.

Heat the oil in a frying pan over medium heat and cook the chicken until golden, 6-7 minutes on each side. Remove to a platter and cover with foil. Add the stock, marmalade, and thyme to the frying pan and boil the mixture hard to reduce to a sticky sauce. Pour over the chicken and serve.
