Cod Baked with Roasted Red Peppers and Feta

Cod, as apt a substitute as we can find for the haddock which is called out in many British recipes, is a mild, very versatile white fish perfect for pairing with strong flavors. In this simple preparation, the cod is topped with roasted red peppers (from a jar), bread cubes, and feta cheese. The dish is then baked up in a mere 15 minutes with gloriously happy results: the cheesy, garlicky, crouton-like topping that crowns the tender fillets is a real treat. Small effort for smiles all around!

Cod Baked with Roasted Red Peppers and Feta

1 lb. cod fillets, cut into 4 pieces
1/2 tsp. paprika
2 tbs. olive oil
1 garlic clove, chopped
2 slices sourdough or ciabatta bread, roughly cubed
2 tbs. chopped fresh parsley
2 roasted red peppers from a jar, cut into wide strips
1/2 cup crumbled feta cheese

Heat the oven to 400°F.

Place the fish fillets in a baking dish, sprinkle the paprika, season with salt and pepper, then drizzle with 1 tbs. of olive oil.

Combine the remaining 1 tbs. olive oil, garlic, bread cubes, and parsley, then season with salt and pepper.

Top the cod with the red peppers, then the bread mixture and finally, sprinkle with the feta. Bake for 15 minutes.
