Tomato and Thyme Cod

This fantastic little recipe may seem sophisticated, but its richly developed flavor belies its simplicity: one might think that the wonderful sauce would take quite a long time to come together, yet the entire dish is ready in under 30 minutes. Moreover, the cod stays perfectly moist as it is cooks nestled in the tomato sauce, assuring a most succulent offering. Simply add a green veg and baked or steamed potatoes alongside and enjoy!

Tomato and Thyme Cod

1 tbs. olive oil
1 large onion, chopped
14 oz. tin chopped tomatoes
1 heaped tsp. light brown sugar
4-5 thyme sprigs, leaves stripped
1 tbs. soy sauce
4 cod fillets

Heat the oil in a large sauté pan, add the onions and cook for 8-10 minutes, until lightly browned and softened. Stir in the tomatoes, brown sugar, thyme, and soy sauce, then let simmer for 5 minutes. Season the cod fillets, nestle them in the pan and partially cover. Cook gently for 8-10 minutes until the cod flakes easily. Serve with baked or steamed potatoes.
