The Week of the Tart

We’ve decided that this is The Week of the Tart — and we’re not talking about fast women (as a Brit might be), but rather pastry-contained comestibles. We’ve given you Caramelized Onion Tart, Blueberry and Almond Tart, and Cherry, Almond, and Lemon Mascarpone Tart thus far, not to mention Lemon Bakewell Tarts. This week, we begin with our favorite recipe for Pastry Dough, and the recipe for Smoked Salmon SoufflĂ© Tart. Later in the week, we’ll post Summer Tomato and Pesto Tart.

Why, you may very well ask, is this The Week of the Tart? Well, we confidently answer, one of the chief virtues of the tart is portability, and one of the chief virtues of August is the opportunity to eat outside. So, we say, go for it: make up a tart to enjoy al fresco — whether you pull together a picnic in the park, or even if you only make it as far as the back garden, get outdoors to eat while the gettin’s good!
