Curried Pasta Salad

Whether served with Chili Ginger Lamb Chops or on its own, this pasta salad is worthy of your attention. It is so simple to toss together and the mild curry flavor, accented with mango chutney and fresh cilantro, is just right. We like the combination of sultanas (golden raisins) and cucumber and celery: the hint of sweetness from the raisins balances beautifully with the crunch of the refreshing diced veggies.

Note: We couldn’t find rogan josh paste, so we substituted rogan josh sauce, which worked beautifully.

Curried Pasta Salad

8 oz. penne
4 tbs. mayonnaise (regular or light)
2/3 cup plain yogurt
4 tsp. rogan josh curry paste (or 3 tbs. rogan josh sauce)
2 tbs. mango chutney
juice of 1/2 lemon
1/3 cup sultanas (golden raisins)
1/4 cup chopped fresh cilantro
1/2 seedless cucumber, diced
2 celery stalks, diced

Boil the pasta in salted water for 8 minutes, or until tender. Drain in a colander then rinse under the cold tap.

Meanwhile, combine the remaining ingredients and plenty of seasoning. Toss in the pasta and serve. Or refrigerate for later use.

    I added chicken pieces to this and served it as a main course — delicious!
